Spritz is one of the most beloved cocktails and has its origins in Veneto. It was born in fact during the Austrian domination between the late '700 and early '800, when the Habsburg soldiers to sweeten the Venetian wines considered too strong began to stretch them with sparkling water.
A first evolution took place in the early '900,
when the first siphons for Seltz water became an alternative to sparkling water.
The cocktail as we know it today,
will come only in the Twenties, when you thought to stain the mixture with a little bitter. Thus two versions were born one in Padua, with the Aperol and the other in Venice with the Select, bitter produced by the Pilla brothers.
